4 cups pack fresh spinach leaves (1 lb.)
1/2 red onion thinly sliced
1 cup roasted peanuts
1/2 sesame seeds
1 grapefruit
2 tsp. fresh lemon juice
2 tsp. Dijon mustard
2 tbsp. vegetable oil
thinly sliced Chinese Sausage just cooked and slightly warm, salt and pepper to taste

Clean and tear spinach on platter. Sprinkle with red onion ringlets. Arrange sliced sausage on platter. Sprinkle with peanuts and sesame seeds. Peel and trim grapefruit of all white membrane and arrange around on platter. In bowl, whisk all liquid ingredients until blended. Dress salad and serve.
