2 lb. Louisiana Boudin Hot Links Sausage
1 small carrot
2-3 stalks celery
1 medium onion
1 medium potato
1 small green pepper, chopped
2-8oz can tomato sauce
1 egg (2 whites)
1/2 tsp. black pepper
1/4 tsp. cayenne pepper
1 cup oatmeal
salt to taste
cheddar cheese (optional)

Chop up all ingredients into a single bowl, using only one can of tomato sauce. Add sausage and mix well. Put all ingredients into cold skillet and pour second can of tomato sauce on top. Cook on medium heat until sauce boils. Add cheese if desire. reduce heat to low for 25-30 minutes. Serve as a meal.
