1 lb. Jody Maroni’s Chicken Italian Sausage (bulk)
1/3 cup olive oil
1/2 yellow onion, diced
2 tbsp. of chopped garlic
2 tbsp. of chopped Italian parsley
2 tbsp. of chopped fresh rosemary
60 oz. (2 cans) Italian plum tomatoes, coarsely chopped
1 cup red wine
2 tbsp. sugar
salt and white pepper to taste
1-2 lbs. pasta

Put olive oil in sauce pan, when moderately hot add sausage. Stir until brown and crumbled. Then add onion and cook until translucent. Add garlic and cook until garlic is soft (do not brown garlic). Add wine and mix well. Add tomatoes with juice. Lower heat and cook 20-30 minutes at a light simmer stirring from time to time. Add parsley and rosemary and continue cooking approximately 15 minutes more. Do not allow to burn. Season with salt and pepper to taste. Serve over pasta of your choice. Serves 4-6.
